Breakfast Applesauce Cookies



These Breakfast Applesauce Cookies are perfect for a quick and nutritious breakfast or snack. Packed with wholesome ingredients like oats, applesauce, bananas, and sweetened naturally with maple syrup, they are gluten-free, clean eating, dairy-free, and vegan-friendly.

Ingredients:

  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • 2 ripe bananas, mashed
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup raisins or dried cranberries

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, mix together oats, applesauce, mashed bananas, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until well combined

Fold in raisins or dried cranberries into the mixture

Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them apart

Flatten each cookie slightly with the back of the spoon

Bake for 15-20 minutes, or until the cookies are golden brown and firm to the touch

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
