Chipotle Chicken Burritos

Ingredients:
- 2 boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chipotle pepper in adobo sauce, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked rice
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 4 large flour tortillas
- Optional toppings: diced avocado, sour cream, chopped cilantro
Instructions:
In a skillet, heat olive oil over medium heat
Add diced onion and cook until softened, about 5 minutes
Add minced garlic, chipotle pepper, cumin, paprika, salt, and pepper
Cook for an additional 2 minutes
Add diced chicken to the skillet and cook until browned and cooked through, about 8-10 minutes

Fold in the sides of each tortilla, then roll up tightly to form burritos
