Tomato Avocado Burgers
These tomato avocado burgers are a refreshing and flavorful gluten-free alternative to traditional burgers. The juicy beefsteak tomatoes serve as the perfect vessel for creamy avocado, crisp vegetables, and your favorite toppings.
Ingredients:
- 4 large beefsteak tomatoes
- 2 ripe avocados
- 1 small red onion, thinly sliced
- 1 cup baby spinach leaves
- 4 gluten-free burger buns
- Salt and pepper to taste
- Optional toppings: sliced red pepper, alfalfa sprouts, sliced cucumber
Instructions:
Slice the tops and bottoms off the tomatoes to create a flat base for the burgers
Carefully scoop out the seeds and some of the flesh from the center of each tomato to create a hollow cavity
Mash the avocados in a bowl and season with salt and pepper to taste
Spread a generous amount of mashed avocado inside each tomato
Layer the sliced red onion and baby spinach leaves on top of the avocado
Optional: Add any additional toppings of your choice, such as sliced red pepper, alfalfa sprouts, or sliced cucumber
Place the stuffed tomatoes on the bottom halves of the gluten-free burger buns
Top each tomato with the remaining halves of the burger buns
Serve immediately and enjoy!
