Strawberry Tiramisu Parfait
In this Strawberry Tiramisu Parfait, you can enjoy the rich layers of mascarpone, ladyfingers, and fresh strawberries. A delicious new take on an old Italian dessert!
Ingredients:
- 1 cup ladyfinger cookies, crushed
- 1 cup fresh strawberries, sliced
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup strong brewed coffee, cooled
- 2 tablespoons coffee liqueur optional
- Chopped fresh mint for garnish
Instructions:
In a bowl, whip together mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth and fluffy
In another bowl, combine brewed coffee and coffee liqueur if using
Layer the bottom of serving glasses with crushed ladyfinger cookies
Dip the sliced strawberries in the coffee mixture and place them over the ladyfinger layer
Add a layer of the mascarpone mixture on top of the strawberries
Repeat the layers until the glasses are filled, finishing with a layer of mascarpone mixture
Chill the parfaits in the refrigerator for at least 4 hours or overnight to set
Before serving, garnish with chopped fresh mint
